The best time to harvest thyme is in the morning just after the dew has dried. Harvesting thyme is done by cutting off the top five or six inches of growth from the top. Harvested fresh thyme can be stored in the refrigerator by wrapping it lightly in plastic or by drying it by placing fresh thyme on a tray in a well-ventilated warm area. Once dry, they can be stored in an airtight container and be used over a period of one to three years.
